Ingredients

  • Cabbage leaves - 8 large
  • Ground beef - 200 grams
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cheddar cheese - 50 grams, shredded
  • Sour cream - 2 tablespoons, for serving
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, bring water to a boil and blanch the cabbage leaves for about 2-3 minutes until soft. Remove and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until fragrant and translucent.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in cumin, paprika, chili powder, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the spices to meld with the meat.
  5. Remove from heat and mix in shredded cheddar cheese until melted and combined.
  6. Lay a cabbage leaf flat on a clean surface, place about 2 tablespoons of the beef mixture in the center, and fold the sides over the filling. Roll tightly to form a tamale. Repeat with the remaining leaves and filling.
  7. Place the rolled tamales seam-side down in a steaming basket over simmering water. Cover and steam for about 20 minutes.
  8. Serve hot, garnished with fresh cilantro and a dollop of sour cream.
