Ingredients

  • Cabbage - 6 large leaves
  • Ground beef (or turkey) - 250 grams
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2, diced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Shredded cheese (cheddar or Mexican blend) - 100 grams
  • Enchilada sauce - 200 ml
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Bring a large pot of water to a boil and blanch the cabbage leaves for 2-3 minutes until pliable. Remove and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion, garlic, and bell pepper, and sauté until softened, about 5 minutes.
  4. Add the ground beef (or turkey) to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  5. Stir in the cumin, chili powder, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
  6. Remove the skillet from heat and mix in half of the shredded cheese.
  7. Lay a cabbage leaf flat and place about 3 tablespoons of the meat mixture in the center. Roll the leaf tightly, tucking in the sides, and place seam side down in a baking dish. Repeat with remaining leaves and filling.
  8. Pour the enchilada sauce evenly over the rolled cabbage enchiladas and sprinkle the remaining cheese on top.
  9. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Garnish with fresh cilantro before serving.
