Ingredients

  • Whole wheat tortillas - 2
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1 small, diced
  • Corn - 100 grams, fresh or frozen
  • Black beans - 200 grams, drained and rinsed
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced red onion and minced garlic; sauté for 2-3 minutes until the onion becomes translucent.
  3. Stir in the diced red bell pepper and zucchini; cook for another 5 minutes until they soften.
  4. Add the corn, black beans, cumin, chili powder, salt, and black pepper; mix well and cook for 5-7 minutes until heated through.
  5. Remove from heat and stir in the chopped cilantro and lime juice.
  6. Warm the whole wheat tortillas in a dry skillet or microwave until pliable, about 30 seconds.
  7. Spoon the vegetable mixture onto the center of each tortilla, fold in the sides, and roll to form a burrito.
  8. Serve immediately with additional lime wedges if desired.
