- Whole wheat tortillas - 2
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Red onion - 1 small, diced
- Corn - 100 grams, fresh or frozen
- Black beans - 200 grams, drained and rinsed
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced red onion and minced garlic; sauté for 2-3 minutes until the onion becomes translucent.
- Stir in the diced red bell pepper and zucchini; cook for another 5 minutes until they soften.
- Add the corn, black beans, cumin, chili powder, salt, and black pepper; mix well and cook for 5-7 minutes until heated through.
- Remove from heat and stir in the chopped cilantro and lime juice.
- Warm the whole wheat tortillas in a dry skillet or microwave until pliable, about 30 seconds.
- Spoon the vegetable mixture onto the center of each tortilla, fold in the sides, and roll to form a burrito.
- Serve immediately with additional lime wedges if desired.
