Ingredients
- Quinoa - 150 grams
- Vegetable broth - 300 ml
- Black beans - 200 grams (canned, rinsed and drained)
- Corn - 100 grams (canned or frozen)
- Red bell pepper - 1 medium, diced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- BBQ sauce - 100 ml
- Whole wheat tortillas - 2 large
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water and cook it in vegetable broth according to package instructions, usually about 15 minutes or until fluffy.
- While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the diced red onion and garlic, sauté for 2-3 minutes until softened.
- Add the diced red bell pepper, corn, black beans, cumin, smoked paprika, salt, and black pepper. Cook for another 5-7 minutes until everything is heated through.
- Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetable mixture. Stir in the BBQ sauce and lime juice, mixing well to combine.
- Warm the whole wheat tortillas in a dry skillet or microwave until pliable. Spoon the quinoa mixture onto the center of each tortilla.
- Sprinkle chopped cilantro on top, then fold in the sides of the tortilla and roll it up tightly to form a burrito.
- Serve immediately, optionally with extra BBQ sauce or lime wedges on the side.
