Ingredients

  • Quinoa - 150 grams
  • Vegetable broth - 300 ml
  • Black beans - 200 grams (canned, rinsed and drained)
  • Corn - 100 grams (canned or frozen)
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • BBQ sauce - 100 ml
  • Whole wheat tortillas - 2 large
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water and cook it in vegetable broth according to package instructions, usually about 15 minutes or until fluffy.
  2. While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the diced red onion and garlic, sauté for 2-3 minutes until softened.
  3. Add the diced red bell pepper, corn, black beans, cumin, smoked paprika, salt, and black pepper. Cook for another 5-7 minutes until everything is heated through.
  4. Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetable mixture. Stir in the BBQ sauce and lime juice, mixing well to combine.
  5. Warm the whole wheat tortillas in a dry skillet or microwave until pliable. Spoon the quinoa mixture onto the center of each tortilla.
  6. Sprinkle chopped cilantro on top, then fold in the sides of the tortilla and roll it up tightly to form a burrito.
  7. Serve immediately, optionally with extra BBQ sauce or lime wedges on the side.
