Ingredients

  • Chicken breast - 300 grams, cooked and shredded
  • Romaine lettuce leaves - 4 large
  • Red bell pepper - 1, diced
  • Avocado - 1, diced
  • Red onion - 50 grams, finely chopped
  • Cilantro - 30 grams, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet, heat olive oil over medium heat. Add the red onion and cook until softened, about 3 minutes.
  2. Add the shredded chicken, cumin, paprika, salt, and black pepper to the skillet. Stir well and cook for an additional 5 minutes to heat through.
  3. Remove from heat and stir in the diced red bell pepper, avocado, cilantro, and lime juice.
  4. Lay out the romaine lettuce leaves on a flat surface. Spoon the chicken mixture evenly onto the center of each leaf.
  5. Fold the sides of the lettuce over the filling and roll from the bottom up to form a burrito shape.
  6. Serve immediately, garnished with extra cilantro and lime wedges if desired.
