Ingredients
- Chicken breast - 300 grams, cooked and shredded
- Romaine lettuce leaves - 4 large
- Red bell pepper - 1, diced
- Avocado - 1, diced
- Red onion - 50 grams, finely chopped
- Cilantro - 30 grams, chopped
- Lime - 1, juiced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet, heat olive oil over medium heat. Add the red onion and cook until softened, about 3 minutes.
- Add the shredded chicken, cumin, paprika, salt, and black pepper to the skillet. Stir well and cook for an additional 5 minutes to heat through.
- Remove from heat and stir in the diced red bell pepper, avocado, cilantro, and lime juice.
- Lay out the romaine lettuce leaves on a flat surface. Spoon the chicken mixture evenly onto the center of each leaf.
- Fold the sides of the lettuce over the filling and roll from the bottom up to form a burrito shape.
- Serve immediately, garnished with extra cilantro and lime wedges if desired.
