Steps
- Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 15 minutes.
- While the potatoes are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cumin, cooking for another minute until fragrant.
- Drain the potatoes and mash them in a bowl. Add the sautéed onion and garlic mixture, salt, black pepper, and chopped cilantro. Mix until well combined.
- Warm the flour tortillas in a dry skillet or microwave until pliable.
