Steps

  1. Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 15 minutes.
  2. While the potatoes are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cumin, cooking for another minute until fragrant.
  4. Drain the potatoes and mash them in a bowl. Add the sautéed onion and garlic mixture, salt, black pepper, and chopped cilantro. Mix until well combined.
