- Tortillas - 2 large (flour or corn)
- Red onion - 50 grams (chopped)
- Garlic - 2 cloves (minced)
- Red bell pepper - 1 medium (diced)
- Cilantro - 10 grams (chopped)
- Avocado - 1 medium (sliced)
- Lime - 1 (juiced)
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salsa - for serving
Steps
- Heat the olive oil in a skillet over medium heat. Add the chopped red onion and minced garlic, and sauté for 2-3 minutes until softened.
- Add the diced red bell pepper to the skillet and cook for another 3-4 minutes until the pepper is tender.
- Stir in the drained black beans, cumin, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until heated through.
- Remove the skillet from heat and stir in the chopped cilantro and lime juice. Adjust seasoning to taste.
- Warm the tortillas in a separate skillet for about 30 seconds on each side until pliable.
- Place a portion of the black bean mixture in the center of each tortilla, fold in the sides, and roll up tightly to form a burrito.
- Serve the burritos warm with avocado slices and salsa on the side.
