  • Black beans - 240 grams (1 can, drained and rinsed)
  • Tortillas - 2 large (flour or corn)
  • Red onion - 50 grams (chopped)
  • Garlic - 2 cloves (minced)
  • Red bell pepper - 1 medium (diced)
  • Cilantro - 10 grams (chopped)
  • Avocado - 1 medium (sliced)
  • Lime - 1 (juiced)
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salsa - for serving

Steps

  1. Heat the olive oil in a skillet over medium heat. Add the chopped red onion and minced garlic, and sauté for 2-3 minutes until softened.
  2. Add the diced red bell pepper to the skillet and cook for another 3-4 minutes until the pepper is tender.
  3. Stir in the drained black beans, cumin, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until heated through.
  4. Remove the skillet from heat and stir in the chopped cilantro and lime juice. Adjust seasoning to taste.
  5. Warm the tortillas in a separate skillet for about 30 seconds on each side until pliable.
  6. Place a portion of the black bean mixture in the center of each tortilla, fold in the sides, and roll up tightly to form a burrito.
  7. Serve the burritos warm with avocado slices and salsa on the side.
