  • Black beans - 240 grams (1 cup, cooked)
  • Whole wheat tortillas - 2 large (10-inch)
  • Eggs - 4 large
  • Red bell pepper - 50 grams (1/2 cup, diced)
  • Onion - 50 grams (1/4 cup, diced)
  • Fresh cilantro - 15 grams (1/4 cup, chopped)
  • Avocado - 100 grams (1 medium, sliced)
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salsa - 60 grams (1/4 cup, for serving)

Steps

  1. Heat olive oil in a skillet over medium heat. Add diced onion and red bell pepper, sautéing until softened (about 5 minutes).
  2. Add cooked black beans, ground cumin, salt, and black pepper to the skillet. Stir well and cook for another 3-4 minutes until heated through.
  3. In a separate bowl, whisk the eggs and pour them into the skillet with the bean mixture. Cook, stirring gently, until the eggs are fully cooked (about 4-5 minutes).
  4. Warm the whole wheat tortillas in a dry skillet or microwave until pliable.
  5. Spoon the egg and bean mixture onto the center of each tortilla, add sliced avocado and chopped cilantro on top.
  6. Fold the sides of the tortilla over the filling and roll it up tightly to form a burrito.
  7. Serve with salsa on the side.
