- Whole wheat tortillas - 2 large (10-inch)
- Eggs - 4 large
- Red bell pepper - 50 grams (1/2 cup, diced)
- Onion - 50 grams (1/4 cup, diced)
- Fresh cilantro - 15 grams (1/4 cup, chopped)
- Avocado - 100 grams (1 medium, sliced)
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salsa - 60 grams (1/4 cup, for serving)
Steps
- Heat olive oil in a skillet over medium heat. Add diced onion and red bell pepper, sautéing until softened (about 5 minutes).
- Add cooked black beans, ground cumin, salt, and black pepper to the skillet. Stir well and cook for another 3-4 minutes until heated through.
- In a separate bowl, whisk the eggs and pour them into the skillet with the bean mixture. Cook, stirring gently, until the eggs are fully cooked (about 4-5 minutes).
- Warm the whole wheat tortillas in a dry skillet or microwave until pliable.
- Spoon the egg and bean mixture onto the center of each tortilla, add sliced avocado and chopped cilantro on top.
- Fold the sides of the tortilla over the filling and roll it up tightly to form a burrito.
- Serve with salsa on the side.
