- Black beans - 200 grams (cooked)
- Whole wheat tortillas - 2 large (about 25 cm diameter)
- Cheddar cheese - 50 grams (shredded)
- Red bell pepper - 1 medium (diced)
- Red onion - 1 small (diced)
- Cilantro - 10 grams (chopped)
- Lime - 1 (juiced)
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet, heat olive oil over medium heat and add the diced red onion and red bell pepper. Sauté for about 5 minutes until softened.
- Add the cooked black beans, cumin, salt, and black pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally.
- Remove the skillet from heat and stir in the chopped cilantro and lime juice. Mix well.
- Warm the whole wheat tortillas in a dry skillet for about 1 minute on each side until pliable.
- Place half of the bean mixture in the center of each tortilla, sprinkle with shredded cheddar cheese, and roll them up tightly, folding in the sides as you go.
- Serve immediately, or grill the burritos in a skillet for an additional 2-3 minutes on each side for a crispy exterior.
