Ingredients

  • Black beans - 200 grams (cooked)
  • Whole wheat tortillas - 2 large (about 25 cm diameter)
  • Cheddar cheese - 50 grams (shredded)
  • Red bell pepper - 1 medium (diced)
  • Red onion - 1 small (diced)
  • Cilantro - 10 grams (chopped)
  • Lime - 1 (juiced)
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet, heat olive oil over medium heat and add the diced red onion and red bell pepper. Sauté for about 5 minutes until softened.
  2. Add the cooked black beans, cumin, salt, and black pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally.
  3. Remove the skillet from heat and stir in the chopped cilantro and lime juice. Mix well.
  4. Warm the whole wheat tortillas in a dry skillet for about 1 minute on each side until pliable.
  5. Place half of the bean mixture in the center of each tortilla, sprinkle with shredded cheddar cheese, and roll them up tightly, folding in the sides as you go.
  6. Serve immediately, or grill the burritos in a skillet for an additional 2-3 minutes on each side for a crispy exterior.
