  • Canned tomatoes - 200 grams, diced
  • Chicken broth - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Lettuce leaves - 4
  • Avocado - 1, sliced
  • Tomato - 1 medium, sliced
  • Whole wheat burger buns - 2
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a skillet over medium heat, then add the sliced onion and sauté until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the shredded chicken, chipotle in adobo, diced tomatoes, chicken broth, salt, pepper, and cumin.
  4. Simmer on low heat for about 15 minutes until the chicken is tender and the sauce thickens.
  5. While the chicken is cooking, toast the whole wheat buns on a separate skillet until golden brown.
  6. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a generous portion of tinga chicken, sliced avocado, and tomato.
  7. Top with fresh cilantro and cover with the top bun.
