Ingredients

  • Lean ground beef (or turkey) - 300 grams
  • Poblano peppers - 2 medium
  • Queso Oaxaca (or mozzarella) - 100 grams, shredded
  • Red onion - 1 small, sliced
  • Avocado - 1 ripe, sliced
  • Whole wheat burger buns - 2
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lettuce leaves - 4 leaves

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. While the grill heats up, slice the poblano peppers in half and remove the seeds.
  3. Drizzle the peppers with olive oil and season with salt and pepper.
  4. Grill the poblano peppers for about 5-7 minutes until charred and tender, then set aside.
  5. In a bowl, mix the ground beef (or turkey) with cumin, garlic powder, salt, and black pepper until well combined.
  6. Form the meat mixture into two patties, about 1.5 cm thick.
  7. Grill the patties for about 4-5 minutes on each side or until they reach your preferred doneness.
  8. During the last minute of cooking, place the grilled poblano peppers on top of the patties and sprinkle with shredded queso Oaxaca, allowing it to melt.
  9. Toast the whole wheat burger buns on the grill for 1-2 minutes until golden.
  10. Assemble the burgers by placing lettuce leaves on the bottom bun, followed by the patty with melted cheese and poblano, red onion slices, and avocado. Top with the other half of the bun and serve.
