Ingredients
- Quinoa - 100 grams
- Black beans - 100 grams, cooked
- Red bell pepper - 1 medium, diced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cilantro - 30 grams, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flaxseed meal - 2 tablespoons
- Water - 6 tablespoons
- Olive oil - 1 tablespoon
- Whole-grain burger buns - 2
- Avocado - 1 medium, sliced
- Tomato - 1 medium, sliced
- Lettuce leaves - 2
Steps
- Rinse quinoa under cold water and cook it in a pot with 200 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
- In a large mixing bowl, mash the cooked black beans with a fork until mostly smooth.
- Add the cooked quinoa, diced red bell pepper, diced red onion, minced garlic, chopped cilantro, cumin, chili powder, salt, and black pepper to the bowl. Mix until well combined.
- In a small bowl, combine flaxseed meal with water and let it sit for 5 minutes to thicken. Add this mixture to the quinoa mixture and stir until everything is well incorporated.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- Toast the whole-grain burger buns in the same skillet for a minute until lightly crisp.
- Assemble the burgers by placing each patty on a bun and topping with avocado slices, tomato slices, and lettuce leaves. Serve immediately.
