Ingredients

  • Quinoa - 100 grams
  • Black beans - 100 grams, cooked
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flaxseed meal - 2 tablespoons
  • Water - 6 tablespoons
  • Olive oil - 1 tablespoon
  • Whole-grain burger buns - 2
  • Avocado - 1 medium, sliced
  • Tomato - 1 medium, sliced
  • Lettuce leaves - 2

Steps

  1. Rinse quinoa under cold water and cook it in a pot with 200 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
  2. In a large mixing bowl, mash the cooked black beans with a fork until mostly smooth.
  3. Add the cooked quinoa, diced red bell pepper, diced red onion, minced garlic, chopped cilantro, cumin, chili powder, salt, and black pepper to the bowl. Mix until well combined.
  4. In a small bowl, combine flaxseed meal with water and let it sit for 5 minutes to thicken. Add this mixture to the quinoa mixture and stir until everything is well incorporated.
  5. Form the mixture into two patties, about 1.5 cm thick.
  6. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  7. Toast the whole-grain burger buns in the same skillet for a minute until lightly crisp.
  8. Assemble the burgers by placing each patty on a bun and topping with avocado slices, tomato slices, and lettuce leaves. Serve immediately.
