Ingredients

  • Ground turkey - 300 grams
  • Poblano peppers - 2 whole
  • Red onion - 1 small, diced
  • Cilantro - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Lime juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Avocado - 1, sliced
  • Romaine lettuce leaves - 4, for wrapping
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Roast the poblano peppers on the grill, turning occasionally, until the skin is charred and blistered, about 8-10 minutes. Remove and let them cool.
  3. In a mixing bowl, combine ground turkey, diced red onion, minced garlic, cilantro, lime juice, cumin, paprika, salt, and black pepper. Mix until well combined.
  4. Form the turkey mixture into 2 equal patties.
  5. Heat olive oil in a skillet over medium heat. Cook the turkey patties for about 5-6 minutes on each side or until fully cooked through and golden brown.
  6. While the patties are cooking, peel the charred skin off the poblano peppers, remove the seeds, and slice them open.
  7. Assemble the burgers by placing a cooked turkey patty on a romaine lettuce leaf, topping it with roasted poblano strips and avocado slices.
  8. Wrap the lettuce around the filling and serve immediately.
