- Pork shoulder - 400 grams
- Achiote paste - 30 grams
- Lime juice - 30 ml
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Romaine lettuce leaves - 4 large
- Avocado - 1 medium, sliced
- Red onion - 1/2 medium, thinly sliced
- Cilantro - 2 tablespoons, chopped
- Radishes - 4, sliced
Steps
- In a bowl, mix the achiote paste, lime juice, minced garlic, cumin, oregano, salt, and black pepper to create a marinade.
- Cut the pork shoulder into chunks and coat them with the marinade, ensuring even coverage. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat your oven to 150°C (300°F). Place the marinated pork in a baking dish and cover it with aluminum foil.
- Cook the pork in the preheated oven for about 2 hours, or until the meat is tender and easily shredded.
- Once cooked, remove the pork from the oven and let it rest for 10 minutes. Shred the pork using two forks.
- In a skillet, heat the olive oil over medium heat and add the shredded pork. Sauté for about 5 minutes to allow the flavors to meld.
- To assemble the burgers, place a generous amount of the sautéed pork on each romaine lettuce leaf. Top with avocado slices, red onion, cilantro, and radish slices.
