Ingredients

  • Pork shoulder - 400 grams
  • Achiote paste - 30 grams
  • Lime juice - 30 ml
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Romaine lettuce leaves - 4 large
  • Avocado - 1 medium, sliced
  • Red onion - 1/2 medium, thinly sliced
  • Cilantro - 2 tablespoons, chopped
  • Radishes - 4, sliced

Steps

  1. In a bowl, mix the achiote paste, lime juice, minced garlic, cumin, oregano, salt, and black pepper to create a marinade.
  2. Cut the pork shoulder into chunks and coat them with the marinade, ensuring even coverage. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your oven to 150°C (300°F). Place the marinated pork in a baking dish and cover it with aluminum foil.
  4. Cook the pork in the preheated oven for about 2 hours, or until the meat is tender and easily shredded.
  5. Once cooked, remove the pork from the oven and let it rest for 10 minutes. Shred the pork using two forks.
  6. In a skillet, heat the olive oil over medium heat and add the shredded pork. Sauté for about 5 minutes to allow the flavors to meld.
  7. To assemble the burgers, place a generous amount of the sautéed pork on each romaine lettuce leaf. Top with avocado slices, red onion, cilantro, and radish slices.
