Ingredients

  • Nopal cactus pads - 2 medium-sized
  • Ground turkey - 250 grams
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Whole wheat burger buns - 2
  • Avocado - 1 small, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Tomato - 1 medium, sliced
  • Red onion - 1/4, thinly sliced

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. Rinse the nopal cactus pads under cold water and pat dry. Remove any spines using a knife.
  3. Brush the nopal pads with olive oil and season with salt and pepper. Grill for about 3-4 minutes on each side until tender and slightly charred. Remove and set aside.
  4. In a mixing bowl, combine ground turkey, garlic powder, cumin, chili powder, salt, and black pepper. Mix until well combined and form into two burger patties.
  5. Grill the turkey patties for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 74°C (165°F).
  6. While the turkey patties are cooking, toast the whole wheat burger buns on the grill until golden brown.
  7. Assemble the burgers by placing a turkey patty on each bun, topping with grilled nopal, avocado slices, tomato, red onion, and chopped cilantro. Squeeze fresh lime juice over the top before closing the burger.
  8. Serve immediately with a side of your choice.
