Ingredients

  • Ground chicken - 400 grams
  • Mole sauce - 100 grams
  • Whole grain burger buns - 2
  • Avocado - 1 medium, sliced
  • Lettuce leaves - 4
  • Tomato - 1 medium, sliced
  • Red onion - 1/2, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the ground chicken, salt, black pepper, and half of the mole sauce. Mix well until fully combined.
  2. Form the mixture into two equal patties, about 1.5 cm thick.
  3. Heat the olive oil in a skillet over medium heat. Once hot, add the patties and cook for 6-7 minutes on each side, or until fully cooked through and golden brown.
  4. While the patties are cooking, warm the remaining mole sauce in a small saucepan over low heat.
  5. Once the patties are cooked, place them on the whole grain burger buns. Top each patty with a generous amount of the warmed mole sauce.
  6. Add sliced avocado, lettuce leaves, tomato slices, red onion, and chopped cilantro on top of the mole sauce.
  7. Close the burgers with the top half of the buns and serve immediately.
