  • Red onion - 50 grams (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro - 2 tablespoons (chopped)
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Burger buns - 2 (whole grain or gluten-free)
  • Avocado - 1 medium (sliced)
  • Pico de gallo - 1/2 cup (for topping)

Steps

  1. Rinse the quinoa under cold water and then cook it according to package instructions until fluffy, about 15 minutes.
  2. In a large bowl, mash the black beans with a fork, leaving some chunks for texture.
  3. Add the sweet corn, cooked quinoa, chopped red onion, minced garlic, cilantro, cumin, chili powder, lime juice, salt, and pepper to the bowl. Mix until well combined.
  4. Form the mixture into two patties, about 1 to 1.5 cm thick.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
  6. While the patties are cooking, toast the burger buns until slightly crispy.
  7. Assemble the burgers by placing a patty on each bun, topping with sliced avocado and pico de gallo.
