- Garlic - 2 cloves (minced)
- Cilantro - 2 tablespoons (chopped)
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Lime juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Burger buns - 2 (whole grain or gluten-free)
- Avocado - 1 medium (sliced)
- Pico de gallo - 1/2 cup (for topping)
Steps
- Rinse the quinoa under cold water and then cook it according to package instructions until fluffy, about 15 minutes.
- In a large bowl, mash the black beans with a fork, leaving some chunks for texture.
- Add the sweet corn, cooked quinoa, chopped red onion, minced garlic, cilantro, cumin, chili powder, lime juice, salt, and pepper to the bowl. Mix until well combined.
- Form the mixture into two patties, about 1 to 1.5 cm thick.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- While the patties are cooking, toast the burger buns until slightly crispy.
- Assemble the burgers by placing a patty on each bun, topping with sliced avocado and pico de gallo.
