Ingredients

  • Chorizo sausage - 200 grams
  • Egg - 1 large
  • Red onion - 1/2, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1 medium, sliced
  • Lettuce leaves - 4 large (for wrapping)
  • Tomato - 1 medium, sliced
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon (for cooking)

Steps

  1. In a skillet over medium heat, add olive oil and sauté the chopped red onion and minced garlic until translucent, about 3-4 minutes.
  2. Add the chorizo to the skillet, breaking it up with a spatula, and cook until browned and fully cooked, about 5-7 minutes.
  3. In a bowl, whisk the egg and stir in the chopped cilantro, salt, and black pepper.
  4. Push the cooked chorizo mixture to one side of the skillet, and pour the egg mixture into the other side. Scramble the egg until fully cooked.
  5. Remove the skillet from heat and prepare the lettuce leaves as a wrap.
  6. To assemble, place some chorizo and scrambled egg mixture on each lettuce leaf, top with avocado slices and fresh tomato slices.
  7. Drizzle lime juice over the top and serve immediately.
