- Cilantro - 1/4 cup, chopped
- Avocado - 1 medium, sliced
- Lettuce leaves - 4 large (for wrapping)
- Tomato - 1 medium, sliced
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon (for cooking)
Steps
- In a skillet over medium heat, add olive oil and sauté the chopped red onion and minced garlic until translucent, about 3-4 minutes.
- Add the chorizo to the skillet, breaking it up with a spatula, and cook until browned and fully cooked, about 5-7 minutes.
- In a bowl, whisk the egg and stir in the chopped cilantro, salt, and black pepper.
- Push the cooked chorizo mixture to one side of the skillet, and pour the egg mixture into the other side. Scramble the egg until fully cooked.
- Remove the skillet from heat and prepare the lettuce leaves as a wrap.
- To assemble, place some chorizo and scrambled egg mixture on each lettuce leaf, top with avocado slices and fresh tomato slices.
- Drizzle lime juice over the top and serve immediately.
