Ingredients

  • Shrimp - 300 grams, peeled and deveined

  • Cilantro - 30 grams, chopped
  • Lime juice - 30 ml
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons
  • Burger buns - 2, whole wheat or regular
  • Avocado - 1, sliced for topping
  • Tomato - 1, sliced for topping
  • Lettuce - 2 leaves, for garnish
  • Chipotle mayo - 2 tablespoons, for spreading

Steps

  1. In a food processor, combine the shrimp, garlic, cilantro, lime juice, chili powder, cumin, salt, and black pepper. Pulse until the mixture is coarsely blended.
  2. Transfer the shrimp mixture to a bowl and add the egg and breadcrumbs. Mix until well combined.
  3. Form the mixture into two patties, making them slightly larger than the burger buns.
  4. Heat the olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  5. While the patties are cooking, toast the burger buns in a separate pan or toaster until golden.
  6. Assemble the burgers by spreading chipotle mayo on the bottom half of each bun. Place a shrimp patty on top, followed by avocado slices, tomato slices, and lettuce. Finish with the top half of the bun.
