Ingredients

  • Zucchini - 250 grams (about 2 medium zucchinis)
  • Egg - 1 large
  • Almond flour - 50 grams (about 1/2 cup)
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Avocado - 1 medium, sliced
  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, egg, almond flour, garlic powder, cumin, paprika, salt, and black pepper. Mix until well combined.
  3. Form the mixture into 2 burger patties.
  4. Heat the olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the burgers are cooking, slice the avocado and squeeze lime juice over the slices to prevent browning.
  6. Once cooked, assemble the burgers by placing each patty on a plate, topping with avocado slices, and garnishing with chopped cilantro.
  7. Serve immediately and enjoy your Burguesa de Calabacita!
