Ingredients

  • Beetroot - 200 grams (peeled and diced)
  • Black beans - 1 cup (cooked and drained)
  • Quinoa - 1/2 cup (cooked)
  • Oats - 1/2 cup (rolled)
  • Garlic - 2 cloves (minced)
  • Red onion - 1/4 cup (finely chopped)
  • Cilantro - 1/4 cup (chopped)
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Whole grain burger buns - 2
  • Avocado - 1 (sliced)
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Toss the diced beetroot in 1 tablespoon of olive oil, salt, and pepper, then spread on a baking sheet and roast for 25-30 minutes until tender.
  3. In a mixing bowl, mash the black beans with a fork until mostly smooth.
  4. Add the roasted beetroot, cooked quinoa, oats, minced garlic, chopped red onion, cilantro, cumin, chili powder, salt, and black pepper to the bowl, and mix until well combined.
  5. Form the mixture into two patties.
  6. Heat the remaining tablespoon of olive oil in a skillet over medium heat, and cook the patties for about 5-7 minutes on each side until crispy and heated through.
  7. Toast the burger buns in the same skillet until golden brown.
  8. Assemble the burgers by placing the lettuce, beetroot patty, sliced avocado, and tomato on the bottom half of the bun, then top with the other half of the bun.
  9. Serve immediately and enjoy your Burguesa de Betabel!
