- Beetroot - 200 grams (peeled and diced)
- Black beans - 1 cup (cooked and drained)
- Quinoa - 1/2 cup (cooked)
- Oats - 1/2 cup (rolled)
- Garlic - 2 cloves (minced)
- Red onion - 1/4 cup (finely chopped)
- Cilantro - 1/4 cup (chopped)
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Whole grain burger buns - 2
- Avocado - 1 (sliced)
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
Steps
- Preheat the oven to 200°C (400°F).
- Toss the diced beetroot in 1 tablespoon of olive oil, salt, and pepper, then spread on a baking sheet and roast for 25-30 minutes until tender.
- In a mixing bowl, mash the black beans with a fork until mostly smooth.
- Add the roasted beetroot, cooked quinoa, oats, minced garlic, chopped red onion, cilantro, cumin, chili powder, salt, and black pepper to the bowl, and mix until well combined.
- Form the mixture into two patties.
- Heat the remaining tablespoon of olive oil in a skillet over medium heat, and cook the patties for about 5-7 minutes on each side until crispy and heated through.
- Toast the burger buns in the same skillet until golden brown.
- Assemble the burgers by placing the lettuce, beetroot patty, sliced avocado, and tomato on the bottom half of the bun, then top with the other half of the bun.
