Ingredients

  • Almonds - 100 grams
  • Black beans - 200 grams, cooked
  • Cooked quinoa - 100 grams
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cornmeal - 2 tablespoons
  • Avocado - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Red onion - 1/2 small, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Whole wheat buns - 2

Steps

  1. In a food processor, pulse the almonds until finely chopped but not turned into flour.
  2. Add the cooked black beans, cooked quinoa, minced garlic, cumin, chili powder, and salt to the food processor. Blend until well combined but still slightly chunky.
  3. Transfer the mixture to a bowl and stir in the cornmeal to help bind the ingredients together.
  4. Form the mixture into 2 burger patties, ensuring they hold together well.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the topping by mixing diced tomato, red onion, cilantro, and lime juice in a bowl. Set aside.
  7. Toast the whole wheat buns on a pan or grill until lightly golden.
  8. Assemble the burgers by placing a patty on each bun, topping with sliced avocado and the tomato-onion-cilantro mixture.
  9. Serve immediately and enjoy your Burguesa de Almendra!
