Ingredients

  • Black beans - 200 grams (cooked and drained)
  • Cooked quinoa - 100 grams
  • Poblano peppers - 2 medium (roasted, peeled, and chopped)
  • Garlic - 2 cloves (minced)
  • Red onion - 50 grams (finely chopped)
  • Cilantro - 15 grams (chopped)
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour - 40 grams (whole wheat or all-purpose)
  • Olive oil - 1 tablespoon (for cooking)
  • Burger buns - 2 (vegan)
  • Avocado - 1 medium (sliced)
  • Lime - 1 (juiced)
  • Additional cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roast the poblano peppers on a baking sheet for about 20 minutes until the skin is blistered and charred, then remove from the oven and cover with a towel to steam for 10 minutes.
  3. Once cooled, peel the skin off the poblano peppers, remove the seeds, and chop them into small pieces.
  4. In a mixing bowl, mash the black beans with a fork until slightly chunky.
  5. Add the cooked quinoa, roasted poblano, minced garlic, chopped red onion, cilantro, cumin, chili powder, salt, and pepper to the mashed beans. Mix well.
  6. Gradually add the flour until the mixture holds together. Form into two patties.
  7. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown.
  8. To assemble, place each patty on a burger bun, top with sliced avocado, drizzle lime juice over the top, and garnish with additional cilantro.
