Ingredients
- Black beans - 200 grams (cooked and drained)
- Cooked quinoa - 100 grams
- Poblano peppers - 2 medium (roasted, peeled, and chopped)
- Garlic - 2 cloves (minced)
- Red onion - 50 grams (finely chopped)
- Cilantro - 15 grams (chopped)
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flour - 40 grams (whole wheat or all-purpose)
- Olive oil - 1 tablespoon (for cooking)
- Burger buns - 2 (vegan)
- Avocado - 1 medium (sliced)
- Lime - 1 (juiced)
- Additional cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Roast the poblano peppers on a baking sheet for about 20 minutes until the skin is blistered and charred, then remove from the oven and cover with a towel to steam for 10 minutes.
- Once cooled, peel the skin off the poblano peppers, remove the seeds, and chop them into small pieces.
- In a mixing bowl, mash the black beans with a fork until slightly chunky.
- Add the cooked quinoa, roasted poblano, minced garlic, chopped red onion, cilantro, cumin, chili powder, salt, and pepper to the mashed beans. Mix well.
- Gradually add the flour until the mixture holds together. Form into two patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown.
- To assemble, place each patty on a burger bun, top with sliced avocado, drizzle lime juice over the top, and garnish with additional cilantro.
