Ingredients
- Red bell pepper - 1 large
- Yellow bell pepper - 1 large
- Black beans - 200 grams (cooked and drained)
- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Burger buns - 2
- Avocado - 1 small, mashed
- Lime juice - 1 tablespoon
- Fresh cilantro - a handful, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove seeds, and place them cut-side down on a baking tray.
- Roast the bell peppers in the oven for about 20 minutes, or until the skins are blistered and charred.
- While the peppers are roasting, heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
- In a large bowl, combine the roasted bell peppers (after peeling off the skins), black beans, cooked quinoa, sautéed onion, breadcrumbs, cumin, chili powder, garlic powder, salt, and black pepper. Mash with a fork or potato masher until combined but still chunky.
- Form the mixture into two burger patties.
- In the same skillet, add a bit more olive oil if needed, and cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, prepare the avocado sauce by mixing the mashed avocado, lime juice, and chopped cilantro in a small bowl. Season with salt to taste.
- To serve, place each patty on a burger bun, top with the avocado sauce, and enjoy!
