Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Black beans - 200 grams (cooked and drained)
  • Cooked quinoa - 100 grams
  • Breadcrumbs - 50 grams
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2
  • Avocado - 1 small, mashed
  • Lime juice - 1 tablespoon
  • Fresh cilantro - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove seeds, and place them cut-side down on a baking tray.
  3. Roast the bell peppers in the oven for about 20 minutes, or until the skins are blistered and charred.
  4. While the peppers are roasting, heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
  5. In a large bowl, combine the roasted bell peppers (after peeling off the skins), black beans, cooked quinoa, sautéed onion, breadcrumbs, cumin, chili powder, garlic powder, salt, and black pepper. Mash with a fork or potato masher until combined but still chunky.
  6. Form the mixture into two burger patties.
  7. In the same skillet, add a bit more olive oil if needed, and cook the patties for about 4-5 minutes on each side until golden brown.
  8. While the patties are cooking, prepare the avocado sauce by mixing the mashed avocado, lime juice, and chopped cilantro in a small bowl. Season with salt to taste.
  9. To serve, place each patty on a burger bun, top with the avocado sauce, and enjoy!
