Ingredients
- Potatoes - 300 grams
- Black beans - 100 grams, cooked
- Cornmeal - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- Peel and chop the potatoes into cubes, then boil them in salted water for about 15 minutes or until tender.
- Drain the potatoes and mash them in a bowl while still warm.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until soft and fragrant, about 5 minutes.
- Add the sautéed onion and garlic to the mashed potatoes along with the black beans, cornmeal, cilantro, cumin, chili powder, salt, and pepper. Mix well until combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat the remaining tablespoon of olive oil in the skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, toast the burger buns lightly on a separate pan or in the oven.
- Assemble the burgers by placing each patty on a bun, followed by lettuce, tomato slices, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite dipping sauce or side.
