Ingredients

  • Potatoes - 300 grams
  • Black beans - 100 grams, cooked
  • Cornmeal - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. Peel and chop the potatoes into cubes, then boil them in salted water for about 15 minutes or until tender.
  2. Drain the potatoes and mash them in a bowl while still warm.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until soft and fragrant, about 5 minutes.
  4. Add the sautéed onion and garlic to the mashed potatoes along with the black beans, cornmeal, cilantro, cumin, chili powder, salt, and pepper. Mix well until combined.
  5. Form the mixture into two patties, about 1.5 cm thick.
  6. Heat the remaining tablespoon of olive oil in the skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  7. While the patties are cooking, toast the burger buns lightly on a separate pan or in the oven.
  8. Assemble the burgers by placing each patty on a bun, followed by lettuce, tomato slices, and avocado. Top with the other half of the bun.
  9. Serve immediately with your favorite dipping sauce or side.
