- Black beans - 1 cup (cooked and drained)
- Quinoa - 1/2 cup (cooked)
- Garlic - 2 cloves (minced)
- Onion - 1 small (finely chopped)
- Cilantro - 1/4 cup (chopped)
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Whole wheat burger buns - 2
- Avocado - 1 (sliced)
- Tomato - 1 (sliced)
- Lettuce - 2 leaves
- Salsa - 1/2 cup
Steps
- Prepare the nopal cactus by cleaning the paddles and removing any spines. Place them on a grill or skillet over medium heat for about 10 minutes until they are tender and slightly charred, flipping halfway through.
- In a mixing bowl, mash the black beans with a fork until they are mostly smooth but still have some texture.
- Add the cooked quinoa, minced garlic, chopped onion, cilantro, cumin, chili powder, salt, and pepper to the mashed black beans. Mix well until all ingredients are combined.
- Once the nopal paddles are cooked, chop them into small pieces and fold them into the bean and quinoa mixture.
- Form the mixture into two burger patties, ensuring they hold together well. If the mixture is too wet, add a tablespoon of flour to help bind it.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- To assemble, place each patty on a whole wheat burger bun. Top with slices of avocado, tomato, and lettuce. Add salsa on top or on the side.
