Ingredients

  • Nopal cactus paddles - 200 grams
  • Black beans - 1 cup (cooked and drained)
  • Quinoa - 1/2 cup (cooked)
  • Garlic - 2 cloves (minced)
  • Onion - 1 small (finely chopped)
  • Cilantro - 1/4 cup (chopped)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Whole wheat burger buns - 2
  • Avocado - 1 (sliced)
  • Tomato - 1 (sliced)
  • Lettuce - 2 leaves
  • Salsa - 1/2 cup

Steps

  1. Prepare the nopal cactus by cleaning the paddles and removing any spines. Place them on a grill or skillet over medium heat for about 10 minutes until they are tender and slightly charred, flipping halfway through.
  2. In a mixing bowl, mash the black beans with a fork until they are mostly smooth but still have some texture.
  3. Add the cooked quinoa, minced garlic, chopped onion, cilantro, cumin, chili powder, salt, and pepper to the mashed black beans. Mix well until all ingredients are combined.
  4. Once the nopal paddles are cooked, chop them into small pieces and fold them into the bean and quinoa mixture.
  5. Form the mixture into two burger patties, ensuring they hold together well. If the mixture is too wet, add a tablespoon of flour to help bind it.
  6. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
  7. To assemble, place each patty on a whole wheat burger bun. Top with slices of avocado, tomato, and lettuce. Add salsa on top or on the side.
