  • cooked lentils - 1 cup

  • fresh cilantro - 1/4 cup, chopped
  • ground cumin - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • whole wheat breadcrumbs - 1/2 cup
  • olive oil - 2 tablespoons
  • burger buns - 2
  • avocado - 1, sliced
  • tomato - 1, sliced
  • lettuce leaves - 2

Steps

  1. In a large bowl, combine the cooked lentils, cooked quinoa, red onion, garlic, cilantro, ground cumin, smoked paprika, salt, and black pepper.
  2. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  3. Stir in the whole wheat breadcrumbs until the mixture holds together.
  4. Form the mixture into two equal-sized patties.
