- Quinoa - 50 grams (uncooked)
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Cilantro - 20 grams (chopped)
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Egg - 1 large (lightly beaten)
- Bread crumbs - 50 grams
- Burger buns - 2 units
- Lettuce - 2 leaves
- Tomato - 1 medium (sliced)
- Avocado - 1 small (sliced)
Steps
- Cook quinoa in 150 ml of water according to package instructions, then let it cool.
- In a large bowl, mash the black beans with a fork until slightly chunky.
- Add the cooked quinoa, chopped red onion, minced garlic, cilantro, cumin, smoked paprika, chili powder, salt, pepper, and the beaten egg to the mashed beans. Mix well until combined.
- Gradually add bread crumbs to the mixture until it holds together well for forming patties.
- Divide the mixture into two equal portions and shape each portion into a burger patty.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the burger buns in a separate pan or toaster.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your choice of sides.
