Ingredients

  • Black beans - 200 grams (cooked)
  • Quinoa - 50 grams (uncooked)
  • Red onion - 50 grams (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro - 20 grams (chopped)
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Egg - 1 large (lightly beaten)
  • Bread crumbs - 50 grams
  • Burger buns - 2 units
  • Lettuce - 2 leaves
  • Tomato - 1 medium (sliced)
  • Avocado - 1 small (sliced)

Steps

  1. Cook quinoa in 150 ml of water according to package instructions, then let it cool.
  2. In a large bowl, mash the black beans with a fork until slightly chunky.
  3. Add the cooked quinoa, chopped red onion, minced garlic, cilantro, cumin, smoked paprika, chili powder, salt, pepper, and the beaten egg to the mashed beans. Mix well until combined.
  4. Gradually add bread crumbs to the mixture until it holds together well for forming patties.
  5. Divide the mixture into two equal portions and shape each portion into a burger patty.
  6. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
  7. While the patties are cooking, toast the burger buns in a separate pan or toaster.
  8. Assemble the burgers by placing a lettuce leaf on each bun, followed by the patty, sliced tomato, and avocado. Top with the other half of the bun.
  9. Serve immediately with your choice of sides.
