Ingredients
- Fresh spinach - 200 grams
- Canned black beans - 1 cup (240 grams), drained and rinsed
- Cooked quinoa - 1/2 cup (90 grams)
- Oats - 1/2 cup (45 grams), blended into flour
- Red onion - 1/2 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Burger buns - 2 pieces
- Avocado - 1 medium, mashed
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked quinoa, black beans, spinach mixture, oat flour, cumin, chili powder, salt, and black pepper. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into two burger patties. If the mixture is too wet, add more oat flour as needed.
- In the same skillet, heat the remaining olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the burgers are cooking, prepare the avocado lime sauce by mixing the mashed avocado, lime juice, and chopped cilantro in a small bowl. Season with salt to taste.
- To assemble, place each burger patty on a bun and top with the avocado lime sauce. Serve with your favorite sides.
