Ingredients

  • Fresh spinach - 200 grams
  • Canned black beans - 1 cup (240 grams), drained and rinsed
  • Cooked quinoa - 1/2 cup (90 grams)
  • Oats - 1/2 cup (45 grams), blended into flour
  • Red onion - 1/2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Burger buns - 2 pieces
  • Avocado - 1 medium, mashed
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the cooked quinoa, black beans, spinach mixture, oat flour, cumin, chili powder, salt, and black pepper. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  4. Form the mixture into two burger patties. If the mixture is too wet, add more oat flour as needed.
  5. In the same skillet, heat the remaining olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the burgers are cooking, prepare the avocado lime sauce by mixing the mashed avocado, lime juice, and chopped cilantro in a small bowl. Season with salt to taste.
  7. To assemble, place each burger patty on a bun and top with the avocado lime sauce. Serve with your favorite sides.
