- Cornmeal - 50 grams
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2
- Avocado - 1, sliced
- Fresh salsa - 100 grams
Steps
- In a large bowl, combine fresh corn kernels, cooked black beans, chopped red bell pepper, green onion, and cilantro.
- Mash the mixture slightly with a fork, leaving some texture, then add the beaten egg, cornmeal, cumin, chili powder, salt, and pepper.
- Mix until well combined and form the mixture into two patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- While the patties are cooking, slice the avocado and prepare the fresh salsa if not using store-bought.
- To assemble, place each patty on a burger bun and top with sliced avocado and fresh salsa. Serve immediately.
