  • Cilantro - 2 tablespoons, chopped
  • Egg - 1, beaten
  • Cornmeal - 50 grams
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2
  • Avocado - 1, sliced
  • Fresh salsa - 100 grams

Steps

  1. In a large bowl, combine fresh corn kernels, cooked black beans, chopped red bell pepper, green onion, and cilantro.
  2. Mash the mixture slightly with a fork, leaving some texture, then add the beaten egg, cornmeal, cumin, chili powder, salt, and pepper.
  3. Mix until well combined and form the mixture into two patties.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
  5. While the patties are cooking, slice the avocado and prepare the fresh salsa if not using store-bought.
  6. To assemble, place each patty on a burger bun and top with sliced avocado and fresh salsa. Serve immediately.
