Ingredients
- Pork shoulder (halal) - 400 grams
- Achiote paste - 30 grams
- Orange juice - 100 ml
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Burger buns - 2
- Pickled red onions - 50 grams
- Fresh cilantro - a handful, chopped
- Avocado - 1, sliced
- Lime - 1, for juice
Steps
- In a bowl, combine the achiote paste, orange juice, minced garlic, cumin, salt, and black pepper to create a marinade.
- Cut the pork shoulder into chunks and coat them with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat the oven to 150°C (300°F). Place the marinated pork in a baking dish, cover it with foil, and bake for 3 hours until tender.
- Once cooked, shred the pork using two forks and mix it with the juices in the baking dish.
- To assemble the burgers, toast the burger buns lightly on a skillet.
- Place a generous amount of shredded cochinita on the bottom half of each bun.
- Top with pickled red onions, sliced avocado, and chopped cilantro.
- Squeeze fresh lime juice over the toppings and cap with the top half of the bun.
- Serve immediately with your favorite sides.
