Ingredients

  • Pork shoulder (halal) - 400 grams
  • Achiote paste - 30 grams
  • Orange juice - 100 ml
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Burger buns - 2
  • Pickled red onions - 50 grams
  • Fresh cilantro - a handful, chopped
  • Avocado - 1, sliced
  • Lime - 1, for juice

Steps

  1. In a bowl, combine the achiote paste, orange juice, minced garlic, cumin, salt, and black pepper to create a marinade.
  2. Cut the pork shoulder into chunks and coat them with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the oven to 150°C (300°F). Place the marinated pork in a baking dish, cover it with foil, and bake for 3 hours until tender.
  4. Once cooked, shred the pork using two forks and mix it with the juices in the baking dish.
  5. To assemble the burgers, toast the burger buns lightly on a skillet.
  6. Place a generous amount of shredded cochinita on the bottom half of each bun.
  7. Top with pickled red onions, sliced avocado, and chopped cilantro.
  8. Squeeze fresh lime juice over the toppings and cap with the top half of the bun.
  9. Serve immediately with your favorite sides.
