Ingredients
- Canned black beans - 400 grams, drained and rinsed
- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Chipotle in adobo sauce - 1 tablespoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Avocado - 1, sliced
- Lettuce leaves - 4
- Tomato - 1, sliced
- Vegan burger buns - 2
Steps
- In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, breadcrumbs, onion, garlic, chipotle in adobo, cumin, coriander, cilantro, salt, and black pepper to the mashed beans. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- In a small bowl, mix the remaining olive oil with any additional chipotle sauce to make the dressing.
- Toast the burger buns lightly in the skillet or oven.
- Assemble the burgers by placing a lettuce leaf, a patty, sliced tomatoes, and avocado on each bun. Drizzle with the chipotle dressing, and top with the other half of the bun.
- Serve immediately with your choice of side.
