Ingredients

  • Canned black beans - 400 grams, drained and rinsed
  • Cooked quinoa - 100 grams
  • Breadcrumbs - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Chipotle in adobo sauce - 1 tablespoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Avocado - 1, sliced
  • Lettuce leaves - 4
  • Tomato - 1, sliced
  • Vegan burger buns - 2

Steps

  1. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, breadcrumbs, onion, garlic, chipotle in adobo, cumin, coriander, cilantro, salt, and black pepper to the mashed beans. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  5. In a small bowl, mix the remaining olive oil with any additional chipotle sauce to make the dressing.
  6. Toast the burger buns lightly in the skillet or oven.
  7. Assemble the burgers by placing a lettuce leaf, a patty, sliced tomatoes, and avocado on each bun. Drizzle with the chipotle dressing, and top with the other half of the bun.
  8. Serve immediately with your choice of side.
