Ingredients

  • Black beans - 200 grams (1 cup, cooked)
  • Roasted red bell pepper - 1 medium, chopped
  • Jalapeño pepper - 1 small, finely chopped
  • Cornmeal - 50 grams (1/2 cup)
  • Cilantro - 30 grams (1/4 cup, chopped)
  • Cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2 medium
  • Avocado - 1 medium, sliced
  • Lettuce - 2 leaves
  • Chipotle mayo - 4 tablespoons

Steps

  1. In a mixing bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the chopped roasted red bell pepper, jalapeño, cornmeal, cilantro, cumin, garlic powder, onion powder, salt, and pepper to the mashed beans. Mix well until fully combined.
  3. Form the mixture into two equal patties, about 1.5 cm thick.
  4. Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly on a separate skillet or toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced avocado, and a generous dollop of chipotle mayo. Top with the other half of the bun.
  7. Serve immediately with your choice of sides.
