- Roasted red bell pepper - 1 medium, chopped
- Jalapeño pepper - 1 small, finely chopped
- Cornmeal - 50 grams (1/2 cup)
- Cilantro - 30 grams (1/4 cup, chopped)
- Cumin - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 medium
- Avocado - 1 medium, sliced
- Lettuce - 2 leaves
- Chipotle mayo - 4 tablespoons
Steps
- In a mixing bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the chopped roasted red bell pepper, jalapeño, cornmeal, cilantro, cumin, garlic powder, onion powder, salt, and pepper to the mashed beans. Mix well until fully combined.
- Form the mixture into two equal patties, about 1.5 cm thick.
- Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly on a separate skillet or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced avocado, and a generous dollop of chipotle mayo. Top with the other half of the bun.
- Serve immediately with your choice of sides.
