Ingredients

  • Pork shoulder - 300 grams

  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Burger buns - 2
  • Avocado - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Pickled jalapeños - 2 tablespoons
  • Sour cream - 2 tablespoons

Steps

  1. In a bowl, combine minced garlic, cumin, oregano, salt, black pepper, and lime juice to create a marinade.
  2. Cut the pork shoulder into large chunks and coat them with the marinade. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.
  3. In a large pot, heat vegetable oil over medium-high heat. Add the marinated pork and sear on all sides until browned, about 5-7 minutes.
  4. Add enough water to the pot to cover the pork, bring to a boil, then reduce to a simmer. Cover and cook for about 2 hours, or until the pork is tender and easily shreds with a fork.
  5. Remove the pork from the pot and shred it with two forks. Return the shredded pork to the pot and let it simmer for an additional 15 minutes to absorb the flavors.
  6. Toast the burger buns lightly on a skillet or grill.
  7. Assemble the burgers by placing a generous amount of carnitas on each bun, then top with sliced avocado, red onion, cilantro, pickled jalapeños, and a dollop of sour cream.
