Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Panko breadcrumbs - 50 grams
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for frying)
  • Burger buns - 2 whole
  • Avocado - 1 small, sliced
  • Chipotle mayo - 2 tablespoons

Steps

  1. In a food processor, combine the shrimp, panko breadcrumbs, egg, minced garlic, cilantro, lime juice, cumin, chili powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Form the shrimp mixture into two patties, about 1.5 cm thick.
  3. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the shrimp patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  4. While the patties are cooking, toast the burger buns in a separate pan or in the oven until lightly golden.
  5. Assemble the burgers by placing a shrimp patty on each bun, topping with avocado slices and chipotle mayo. Serve immediately.
