- Zucchini - 200 grams, grated
- Canned black beans - 100 grams, drained and rinsed
- Breadcrumbs - 50 grams
- Chopped onion - 50 grams
- Garlic - 1 clove, minced
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Lettuce leaves - 2
Steps
- In a large bowl, combine the grated zucchini, black beans, breadcrumbs, chopped onion, minced garlic, cilantro, cumin, chili powder, salt, and black pepper.
- Mash the mixture with a fork until well combined but still slightly chunky.
- Form the mixture into two patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the whole wheat burger buns in a separate pan until lightly crispy.
- Assemble the burgers by placing a patty on each bun, topped with sliced tomato, avocado, and a lettuce leaf.
