  • Canned black beans - 100 grams, drained and rinsed
  • Breadcrumbs - 50 grams
  • Chopped onion - 50 grams
  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Whole wheat burger buns - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Lettuce leaves - 2

Steps

  1. In a large bowl, combine the grated zucchini, black beans, breadcrumbs, chopped onion, minced garlic, cilantro, cumin, chili powder, salt, and black pepper.
  2. Mash the mixture with a fork until well combined but still slightly chunky.
  3. Form the mixture into two patties.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, toast the whole wheat burger buns in a separate pan until lightly crispy.
  6. Assemble the burgers by placing a patty on each bun, topped with sliced tomato, avocado, and a lettuce leaf.
