  • Black beans - 100 grams (cooked and drained)
  • Oats - 50 grams (rolled)
  • Red onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro - 2 tablespoons (chopped)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon (for frying)
  • Burger buns - 2 (whole wheat recommended)
  • Avocado - 1 (sliced)
  • Lime juice - 1 tablespoon
  • Vegan yogurt - 2 tablespoons (optional for crema)
  • Fresh lettuce - 2 leaves

Steps

  1. In a bowl, mash the cooked beetroot and black beans together until well combined.
  2. Add the rolled oats, chopped red onion, minced garlic, cilantro, cumin, chili powder, and salt to the mixture and mix until a dough-like consistency forms.
  3. Divide the mixture into two equal portions and shape them into burger patties.
  4. Heat olive oil in a pan over medium heat and cook the patties for about 5-7 minutes on each side, or until they are crispy and heated through.
  5. While the patties are cooking, prepare the lime crema by mixing vegan yogurt (if using) with lime juice in a small bowl.
  6. Toast the burger buns lightly on a separate pan or in a toaster.
  7. Assemble the burgers by placing a patty on each bun, topping with avocado slices, fresh lettuce, and a drizzle of lime crema.
  8. Serve immediately with your favorite side.
