Ingredients

  • Erythritol sweetener - 2 tablespoons

  • Baking powder - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Oil for frying - 100 ml

Steps

  1. In a mixing bowl, combine the ground walnuts, almond flour, erythritol, cinnamon, baking powder, and salt.
  2. In another bowl, whisk the egg and mix in the vanilla extract.
  3. Pour the egg mixture into the dry ingredients and stir until a dough forms.
  4. Heat the oil in a pan over medium heat.
  5. Scoop about a tablespoon of the dough and form it into a small patty.
  6. Carefully place the patty into the hot oil and fry until golden brown, about 2-3 minutes per side.
  7. Remove the buñuelos from the oil and place them on paper towels to drain excess oil.
  8. Serve warm, optionally dusted with a little extra erythritol and cinnamon.
