- Almond flour - 100g
- Coconut flour - 20g
- Baking powder - 1 tsp
- Salt - a pinch
- Egg - 1 large
- Vanilla extract - 1 tsp
- Cinnamon - 1 tsp
- Erythritol (or any low-carb sweetener) - 30g
- Butter (melted) - 30g
- Oil (for frying) - as needed
Steps
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, salt, cinnamon, and erythritol.
- In another bowl, whisk together the egg, vanilla extract, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a bit more almond flour.
- Divide the dough into 4 equal portions and flatten each portion into a disc about 1/2 inch thick.
- Heat oil in a frying pan over medium heat. Once hot, carefully place the discs into the oil, frying for about 2-3 minutes on each side until golden brown.
- Remove the buñuelos from the oil and place them on paper towels to absorb excess oil.
- Sprinkle with additional erythritol and cinnamon before serving.
