Ingredients

  • Quinoa - 150 grams
  • Black beans - 200 grams (canned, drained and rinsed)
  • Cherry tomatoes - 150 grams, halved
  • Red bell pepper - 1 medium, diced
  • Avocado - 1 medium, diced
  • Corn - 100 grams (canned or frozen)
  • Red onion - 1/2 medium, finely chopped
  • Cilantro - 30 grams, chopped
  • Lime - 1 medium, juiced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili powder - 1/2 teaspoon (optional)

Steps

  1. Rinse the quinoa under cold water and cook it according to package instructions, usually in a pot with 300 ml of water, bringing it to a boil, then reducing to a simmer for about 15 minutes until fluffy.
  2. While the quinoa is cooking, prepare the vegetables: halve the cherry tomatoes, dice the red bell pepper and avocado, finely chop the red onion, and rinse the black beans and corn if using canned.
  3. In a large mixing bowl, combine the black beans, cherry tomatoes, red bell pepper, corn, red onion, and cilantro.
  4. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, black pepper, and chili powder (if using).
  5. Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the vegetable mixture.
  6. Pour the dressing over the quinoa and vegetables, and gently toss to combine all the ingredients evenly.
  7. Serve the quinoa bowl topped with diced avocado and additional cilantro if desired.
