Ingredients
- Quinoa - 150 grams
- Black beans - 200 grams (canned, drained and rinsed)
- Cherry tomatoes - 150 grams, halved
- Red bell pepper - 1 medium, diced
- Avocado - 1 medium, diced
- Corn - 100 grams (canned or frozen)
- Red onion - 1/2 medium, finely chopped
- Cilantro - 30 grams, chopped
- Lime - 1 medium, juiced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chili powder - 1/2 teaspoon (optional)
Steps
- Rinse the quinoa under cold water and cook it according to package instructions, usually in a pot with 300 ml of water, bringing it to a boil, then reducing to a simmer for about 15 minutes until fluffy.
- While the quinoa is cooking, prepare the vegetables: halve the cherry tomatoes, dice the red bell pepper and avocado, finely chop the red onion, and rinse the black beans and corn if using canned.
- In a large mixing bowl, combine the black beans, cherry tomatoes, red bell pepper, corn, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, cumin, salt, black pepper, and chili powder (if using).
- Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the vegetable mixture.
- Pour the dressing over the quinoa and vegetables, and gently toss to combine all the ingredients evenly.
- Serve the quinoa bowl topped with diced avocado and additional cilantro if desired.
