Ingredients

  • Black beans - 1 cup (cooked or canned, drained and rinsed)
  • Quinoa - 1/2 cup (uncooked)
  • Cherry tomatoes - 1/2 cup (halved)
  • Red bell pepper - 1/2 (diced)
  • Avocado - 1 small (sliced)
  • Corn - 1/2 cup (fresh or canned, drained)
  • Red onion - 1/4 cup (finely chopped)
  • Cilantro - 1/4 cup (chopped)
  • Lime - 1 (juiced)
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water, then combine it with 1 cup of water in a small saucepan. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until the water is absorbed and quinoa is fluffy.
  2. While the quinoa is cooking, in a large bowl, combine the black beans, cherry tomatoes, red bell pepper, corn, red onion, and cilantro.
  3. In a separate small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper to create a dressing.
  4. Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the vegetable mixture.
  5. Pour the dressing over the bowl and toss everything together until well combined.
  6. Serve in bowls topped with sliced avocado and additional cilantro if desired.
