Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Olive oil - 1 tablespoon
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Black beans - 1 cup, drained and rinsed
  • Corn - 1/2 cup, frozen or fresh
  • Cherry tomatoes - 1 cup, halved
  • Avocado - 1 medium, diced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, heat olive oil in a large skillet over medium heat.
  4. Add the diced red bell pepper and zucchini to the skillet and sauté for 5-7 minutes until they are tender.
  5. Stir in the black beans, corn, cherry tomatoes, cumin, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally, until heated through.
  6. Once the rice is cooked, fluff it with a fork and divide it between two bowls.
  7. Top each bowl of rice with the sautéed vegetable mixture.
  8. Add diced avocado and chopped cilantro on top, then drizzle with lime juice before serving.
