- Brown rice - 1 cup
- Water - 2 cups

- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Black beans - 1 cup, drained and rinsed
- Corn - 1/2 cup, frozen or fresh
- Cherry tomatoes - 1 cup, halved
- Avocado - 1 medium, diced
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the brown rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, heat olive oil in a large skillet over medium heat.
- Add the diced red bell pepper and zucchini to the skillet and sauté for 5-7 minutes until they are tender.
- Stir in the black beans, corn, cherry tomatoes, cumin, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally, until heated through.
- Once the rice is cooked, fluff it with a fork and divide it between two bowls.
- Top each bowl of rice with the sautéed vegetable mixture.
- Add diced avocado and chopped cilantro on top, then drizzle with lime juice before serving.
