Ingredients

  • Nopal cactus pads - 2 medium-sized
  • Fresh cheese (like queso fresco or cotija) - 100 grams, crumbled
  • Black beans - 100 grams, cooked and rinsed
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, finely chopped
  • Fresh cilantro - 10 grams, chopped
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the nopal cactus pads by rinsing them thoroughly under cold water. Use a knife to scrape off any thorns and the outer skin, then slice them into strips.
  2. In a skillet over medium heat, add a splash of olive oil and sauté the nopal strips for about 5-7 minutes until they are tender and slightly browned. Season with salt and pepper to taste.
  3. In a mixing bowl, combine the cooked black beans, cherry tomatoes, red onion, cilantro, lime juice, and a pinch of salt and pepper. Mix well to create a fresh topping.
  4. To assemble the bocadillos, place a generous spoonful of the bean mixture on each nopal strip, and top with crumbled fresh cheese.
  5. Serve immediately, garnished with additional cilantro and lime wedges if desired.
