- Vegan butter - 1/4 cup (60g), softened
- Sugar - 2 tablespoons (25g)
- Salt - 1/4 teaspoon
- Cold water - 3-4 tablespoons (45-60ml)
- Guava paste - 100g, cut into small rectangles
- Powdered sugar - for dusting (optional)
Steps
- In a mixing bowl, combine all-purpose flour, softened vegan butter, sugar, and salt. Mix until crumbly.
- Gradually add cold water, one tablespoon at a time, mixing until a dough forms. It should be smooth but not sticky.
- Wrap the dough in plastic wrap and refrigerate for 20 minutes.
- Preheat your oven to 180°C (350°F).
- On a lightly floured surface, roll out the dough to about 1/8 inch (3mm) thick.
- Cut the dough into squares or circles, approximately 3 inches (7.5cm) in diameter.
- Place a small rectangle of guava paste in the center of each piece of dough.
- Fold the dough over the guava paste to create a pocket, pressing the edges to seal. Use a fork to crimp the edges for a decorative finish.
- Place the filled bocadillos on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Remove from the oven and let cool slightly. Dust with powdered sugar if desired before serving.
