  • bell pepper - 1 medium (sliced)
  • zucchini - 1 small (sliced)
  • cumin - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • lime juice - 1 tablespoon
  • fresh cilantro - 2 tablespoons (chopped)
  • bolillo rolls - 2
  • avocado - 1 (sliced)

Steps

  1. In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic; sauté for 2-3 minutes until translucent.
  2. Add the sliced bell pepper and zucchini to the skillet. Cook for another 5-7 minutes until they are tender.
  3. Stir in the cooked black beans, cumin, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
  4. Remove the skillet from heat and stir in the lime juice and chopped cilantro.
  5. While the bean mixture cools slightly, cut the bolillo rolls in half and toast them lightly on a grill or in a toaster.
  6. To assemble the bocadillos, spoon the bean and vegetable mixture onto the bottom half of each bolillo roll. Top with fresh avocado slices and close the sandwich.
