Ingredients

  • Fresh corn kernels - 300 grams
  • Cornmeal - 75 grams

  • Salt - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Chopped cilantro - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Vegetable oil - 2 tablespoons (for frying)
  • Sour cream - 50 grams
  • Lime zest - 1 teaspoon
  • Chili powder - 1/4 teaspoon (optional)

Steps

  1. In a large bowl, combine the fresh corn kernels, cornmeal, flour, baking powder, salt, cumin, and chopped cilantro.
  2. Add lime juice to the mixture and stir until well combined. If the mixture is too dry, add a little water to achieve a thick batter consistency.
  3. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Once hot, drop spoonfuls of the corn mixture into the skillet, flattening them slightly to form patties.
  4. Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Add more oil as needed for subsequent batches.
  5. While the corn cakes are cooking, prepare the lime crema by mixing sour cream, lime zest, and chili powder in a small bowl until smooth.
  6. Serve the bocadillos warm with a dollop of lime crema on top.
