- Ground cumin - 1/2 teaspoon
- Chopped cilantro - 2 tablespoons
- Lime juice - 1 tablespoon
- Vegetable oil - 2 tablespoons (for frying)
- Sour cream - 50 grams
- Lime zest - 1 teaspoon
- Chili powder - 1/4 teaspoon (optional)
Steps
- In a large bowl, combine the fresh corn kernels, cornmeal, flour, baking powder, salt, cumin, and chopped cilantro.
- Add lime juice to the mixture and stir until well combined. If the mixture is too dry, add a little water to achieve a thick batter consistency.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Once hot, drop spoonfuls of the corn mixture into the skillet, flattening them slightly to form patties.
- Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Add more oil as needed for subsequent batches.
- While the corn cakes are cooking, prepare the lime crema by mixing sour cream, lime zest, and chili powder in a small bowl until smooth.
- Serve the bocadillos warm with a dollop of lime crema on top.
