Ingredients

  • Chorizo sausage - 200 grams
  • Shredded mozzarella cheese - 100 grams
  • Cream cheese - 50 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Cilantro - 2 tablespoons, chopped
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  3. In a mixing bowl, combine the cooked chorizo with cream cheese, garlic powder, cumin, salt, black pepper, and chopped cilantro. Mix well until smooth.
  4. In another bowl, combine shredded mozzarella cheese and almond flour. Add the egg and mix until a dough forms.
  5. Divide the cheese dough into small balls (about 30 grams each) and flatten them into discs.
  6. Place a spoonful of the chorizo filling in the center of each disc and fold the edges over to seal them completely.
  7. Place the bocadillos on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
