- Chorizo sausage - 200 grams
- Shredded mozzarella cheese - 100 grams
- Cream cheese - 50 grams
- Almond flour - 30 grams
- Egg - 1 large
- Cilantro - 2 tablespoons, chopped
- Garlic powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- In a mixing bowl, combine the cooked chorizo with cream cheese, garlic powder, cumin, salt, black pepper, and chopped cilantro. Mix well until smooth.
- In another bowl, combine shredded mozzarella cheese and almond flour. Add the egg and mix until a dough forms.
- Divide the cheese dough into small balls (about 30 grams each) and flatten them into discs.
- Place a spoonful of the chorizo filling in the center of each disc and fold the edges over to seal them completely.
- Place the bocadillos on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
