- Chayote - 2 medium-sized
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Avocado - 1 medium, diced
- Tomato - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
- While the skillet heats, peel and slice the chayote into thin rounds.
- Add the chayote slices to the skillet and sauté for about 10 minutes until tender.
- Stir in the minced garlic, cumin, smoked paprika, salt, and black pepper, cooking for an additional 2-3 minutes until fragrant.
- In a bowl, combine the diced avocado, tomato, cilantro, and lime juice to make the avocado salsa.
- In a separate skillet, warm the corn tortillas over low heat for about 1-2 minutes on each side until pliable.
- To assemble, place a portion of the sautéed chayote on each tortilla and top with the avocado salsa.
