  • Tomato - 1 medium, sliced

  • Corn tortillas - 4
  • Lime - 1, cut into wedges

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the zucchini into 1 cm thick rounds and place them in a bowl.
  3. Drizzle the olive oil over the zucchini and sprinkle with garlic powder, chili powder, cumin, salt, and black pepper. Toss to coat evenly.
  4. Grill the zucchini rounds for about 3-4 minutes on each side, or until they are tender and have grill marks.
  5. While the zucchini is grilling, warm the corn tortillas on the grill for about 30 seconds on each side until they are pliable.
  6. Assemble the bocadillos by placing grilled zucchini on one half of each tortilla.
  7. Top with slices of avocado, tomato, red onion, and chopped cilantro.
  8. Fold the tortillas over and serve with lime wedges on the side.
