- Cauliflower - 300 grams
- Mozzarella cheese, shredded - 200 grams
- Parmesan cheese, grated - 50 grams
- Egg - 1 large
- Ground cumin - 1 teaspoon
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - ½ teaspoon
- Black pepper - ½ teaspoon
- Cooked birria beef - 200 grams
- Birria broth - 100 ml
- Fresh cilantro, chopped - 2 tablespoons
- Red onion, thinly sliced - 50 grams
- Sour cream - 2 tablespoons
- Lime wedges - for serving
Steps
- Preheat the oven to 220°C (425°F).
- Steam the cauliflower florets until tender, about 10 minutes, then drain and let cool.
- Once cooled, blend the cauliflower in a food processor until it resembles rice, then place it in a clean kitchen towel and squeeze out excess moisture.
- In a bowl, mix the cauliflower, 150 grams of mozzarella cheese, Parmesan cheese, egg, cumin, garlic powder, oregano, salt, and black pepper until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a pizza crust. Bake for 15-20 minutes until golden brown and firm.
- While the crust is baking, heat the birria broth in a small saucepan and add the cooked birria beef to warm it through.
- Once the crust is ready, remove it from the oven and top it with the remaining mozzarella cheese, birria beef, and red onion slices.
- Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream and lime wedges.
