Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese, shredded - 200 grams
  • Parmesan cheese, grated - 50 grams
  • Egg - 1 large
  • Ground cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - ½ teaspoon
  • Black pepper - ½ teaspoon
  • Cooked birria beef - 200 grams
  • Birria broth - 100 ml
  • Fresh cilantro, chopped - 2 tablespoons
  • Red onion, thinly sliced - 50 grams
  • Sour cream - 2 tablespoons
  • Lime wedges - for serving

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Steam the cauliflower florets until tender, about 10 minutes, then drain and let cool.
  3. Once cooled, blend the cauliflower in a food processor until it resembles rice, then place it in a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, mix the cauliflower, 150 grams of mozzarella cheese, Parmesan cheese, egg, cumin, garlic powder, oregano, salt, and black pepper until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a pizza crust. Bake for 15-20 minutes until golden brown and firm.
  6. While the crust is baking, heat the birria broth in a small saucepan and add the cooked birria beef to warm it through.
  7. Once the crust is ready, remove it from the oven and top it with the remaining mozzarella cheese, birria beef, and red onion slices.
  8. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro and serve with sour cream and lime wedges.
